How to make your own ice cream

Imagine the scene; a roasting hot summer afternoon, dinner’s finished, everyone’s sat round the table wondering what’s for dessert. What could be more satisfying than serving up a few scoops of your very own deliciously cooling homemade ice cream? Although ice cream that we make here at the dairy use a whole array of machinery and techniques to perfect our range of flavours, you actually don’t need that much to whip up a small batch for yourself. Here’s everything you need to know…

The method

There are many different ways to go about making your own ice cream, but you might be happy to know that you definitely don’t need an expensive ice cream machine taking up valuable kitchen-counter space to make a successful go at it. Making good ice cream revolves around one simple concept; mixing your ingredients while they’re being frozen. We’ll assume you don’t have an ice cream machine handy.

Hazards of the job

Making ice cream is an art and there are a few common mistakes that you’ll want to avoid when doing it yourself. Many recipes call for mixes that don’t involve eggs – a step we see as a bit of a misstep. Egg yolks are what ensures your results are nicely dense and creamy, and skipping them for whatever reason often makes for a slightly less firm frozen ‘mousse’ type substance… not all that satisfying if you ask us! That said, when frozen, egg has a tendency to form into large crystals – which no one wants emerging from their well-earned bowl of the good stuff. That’s why mixing whilst freezing is so important. The churning action simply stops these unsightly crystals from forming and ruining all your hard work.
