Coffee Buns

What could be better in the morning than a cup of coffee accompanied by a coffee bun? Nothing, that’s what. Especially if you’re using Sue’s recipe… Delicious!

Instructions:

Step 1

Cream the butter and sugar together then beat in the egg then the coffee essence.

Step 2

Add the flour and a pinch of salt then, using your hands, roll into 12 balls.  (Add an extra tbsp coffee if the mixture is too bitty; the dough should come together easily in your hands). Place on a greased baking sheet and flatten slightly.

Step 3

Brush the top with egg then bake at 190C / 375F / Gas 5 for about 15 minutes or until golden and just firm.  Remove to a wire rack to cool.

Ingredients:

  • 150g Graham’s butter, softened
  • 150g unrefined demerara sugar
  • 1 large free-range egg
  • 1-2 tbsp coffee essence (or strong black coffee, cooled)
  • 300g self-raising flour, sifted
  • 50g currants
  • Beaten egg yolk or milk, to glaze
