Crush and chop a clove of garlic. Finely chop a red onion and chilli and add to the garlic.
Peel and half a cucumber and use a small teaspoon to remove the seeds from the middle. Optional: you can salt the cucumber and set aside
for 15 minutes and then rinse if you want the cucumber to be firm.
Grate the cucumber on a course grater and add to the mix with roughly chopped coriander and the quark.
Season with salt and pepper and serve.
