Cheese and Chive Scones

The addition of chives and Quark bring a new dimension to a traditional classic.

Instructions:

Step 1

Preheat the oven to 220C. Rub the butter into the flour to form a crumby like texture.

Step 2

Chop the spring onions and chives finely then stir into the flour mix and add some salt and pepper.

Step 3

In a separate jug or bowl whisk together the quark, milk and eggs until smooth then stir into the dry ingredients. Do this gently to avoid over working.

Step 4

Tip onto a lightly floured surface when it just comes together and pat out until 3cm thick.

Step 5

Using a round cutter cut the scones out, gently rerolling any scraps. Place on a baking tray and brush with a little milk before topping with some more grated cheese.

Step 6

Bake for 12-15 minutes or until well risen and golden.

Step 7

Serve hot with butter or cooled with some cream cheese mixed with lemon and pepper, cucumber and good ham or smoked salmon for a nice afternoon tea treat.

  • 450g self raising flour
  • 125g Graham’s unsalted butter
  • 75g Graham’s grated mature cheddar
  • 3 spring onions
  • Small handful chives
  • Salt + pepper
  • 125g Graham’s Natural Quark
  • 75g Graham’s milk
  • 2 eggs
  • Milk and cheese, to top
