Muffins are so simple to make and are perfect sweet, savoury, as a treat or a midday snack! This recipe is so versatile and if you're not a fan of blueberries just swap them out for another berry - I love raspberries as they are naturally sweet.

  • 200g self raising flour
  • 100g caster sugar
  • ½ tsp baking powder
  • 100ml sunflower or vegetable oil
  • 100ml Graham's whole milk
  • 1 egg
  • 50g oats + 50g extra to top
  • 150g blueberries
  • 50g demerara sugar

Step 1

Preheat oven to 180C. Mix flour, sugar and baking powder.

Step 2

Whisk oil, milk and egg until smooth.

Step 3

Add to dry ingredients. Stir to combine.

Step 4

Fold in oats and blueberries.

Step 5

Spoon the batter into cases. Top with sugar and oats.

Step 6

Bake for 15-20 mins.

Allow to cool.
