Curried Pumpkin & Squash Soup with Smoked Paprika Yogurt

It doesn’t have to be Halloween for pumpkin recipes, you can always substitute for more Butternut Squash if you’re struggling to find one.

Instructions:

Step 1

Place onion, pumpkin, butternut squash, carrots and potato in a pot.

Step 2

Add water until two thirds of the veg is covered.

Step 3

Bring to the boil.

Step 4

Turn down the heat and simmer for 20 mins.

Step 5

Add curry powder and salt and pepper.

Step 6

Continue to simmer for 5 mins.

Step 7

Blend the soup till smooth.

Step 8

In a bowl, combine the yogurt and smoked paprika.

Step 9

Serve the soup with a swirl of yogurt.

Ingredients:

  • 1 large white onion, roughly diced
  • 500g pumpkin, peeled and chopped in to 1cm cubes
  • 500g butternut squash, peeled and chopped in to 1cm cubes
  • 2 medium carrots, washed and roughly chopped
  • 250g potato, peeled and chopped in to 1 cm cubes
  • 2 tsp medium bombay curry powder
  • Water
  • Salt & pepper
  • Graham’s natural yogurt
  • Smoked paprika powder
